Day 5 – Success

Today was a good day – it was Friday, the sun was shining, I noticed that I started a mason jar salad trend at work, I got to see family (and share good dinner with them!) and overall felt good.

Breakfast: Apple with almond butter

Lunch: Chicken, Salad and Avocado Dressing

Dinner: Crockpot Spaghetti sauce with Zoodles

Slow Cooker Spaghetti Sauce

Ingredients:
1 chopped green pepper
1 chopped medium onion
4 stalks celery, chopped
3 carrot sticks, chopped
1 cup sliced mushrooms
4 cloves minced garlic
1 can artichoke hearts, chopped
1 can black olives, halved
3 cans – 14-1/2 oz each – Italian diced tomatoes – drained some
2 cans – 15 oz each – tomato sauce
2 cans – 6 oz each – tomato paste
2 bay leafs
2+ TBLS Italian seasoning
1 TBLS dried basil
2 tsp dried marjoram
1 tsp salt
1/2 tsp pepper
2 pounds Italian sausage cooked and drained

Directions: 
Put all ingredients in a 5 qt slow cooker. Stir, cover and cook on low for 6 – 8 hours.
Makes 10 – 12 servings
