I am a little behind times – I have spent much more time in the kitchen than I had anticipated! Sunday, I went shopping and got most of the items on my list for the week. I spent quite a bit of time at Sam’s club, getting the best bang for my buck on produce – and also due to the amount of time I spent reading ingredient labels. It was an eye opening shopping trip for sure!
Sunday night, we said goodbye to sushi, which I know I will be missing in the next month!
Day 1 of the Whole30 was pretty low key – I may have under prepared myself in terms of food quantity, but I survived. I got hungry in between meals and somehow managed to fight off the leftover Easter candy that is scattered throughout my office.
I went to Zumba and attempted to move my hips, which is always my favorite way to start the week. I definitely understand why Whole30 recommends eating another meal after working out. Especially when you didn’t eat a good enough breakfast.
Breakfast: Strawberries and Blackberries (Lesson learned – need more protein!)
Lunch: Salad with Prosciutto and homemade dressing (Note: Super excited about the Prosciutto. It is one of my favorite foods)
Dinner: I had a Kabob Salad while out with my family, and Mike made a delicious looking creation at home – a hamburger, mushrooms, potatoes cooked in the hamburger fat, cooked vegetables and strawberries. A very balanced looking meal!
